Egg Nog ~ THM S

Holiday parties demand holiday beverages, and no beverage screams holiday more than egg nog! This rich, sweet drink is sure to please everyone at your gathering. It is super simple to make and I challenge you to find someone who doesn’t like it just as well as it’s sugary store bought counterpart.

You Will Need:

Egg Nog ~ THM S

Classic holiday special drink. Make it extra rich and creamy by subbing half of the nut milk for half and half.

Ingredients

  • 6 large eggs
  • 2/3 cup xes sweetener or THM Gentle Sweet
  • 1/4 teaspoon mineral salt
  • 4 cups almond or cashew milk divided
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1 cup heavy whipping cream
  • Additional nutmeg optional

Instructions

  • In a heavy saucepan, whisk together eggs, sweetener and salt. Gradually add 2 cups of the nut milk; cook and stir often over low heat until a thermometer reads 160°-170°, about 15 minutes. Do not allow to boil. Immediately transfer to a large bowl.
  • Stir in vanilla, nutmeg and remaining nut milk. Place bowl in an ice-water bath, stirring until milk mixture is cool. (If mixture separates, process in a blender until smooth.) Refrigerate, covered, until cold, at least 3 hours.
  • To serve, beat cream until soft peaks form. Whisk gently into cooled milk mixture. If desired, sprinkle with additional nutmeg before serving. This produces a thick creamy layer that rises to the top somewhat. If you don’t want that you can skip beating the cream and just add it, unbeaten, into the drink mix. This will produce a thick drink with a more storebought type consistency.

Slow Cooker or Stove Top Hot Cocoa ~ THM S

You will need:

Slow Cooker or Stovetop Hot Cocoa ~ THM S

This is a rich, decadent recipe for hot chocolate!

Ingredients

  • 1 1/2 c. Thm chocolate chips
  • 1/4 c. cocoa powder
  • 1/2 c. xes sweetener or gentle sweet
  • 1 tsp. vanilla extract
  • 1 c. heavy cream
  • 6 c. almond or cashew milk
  • Mazing Marshmallows from the cookbook, p. 389

Instructions

  • Combine all ingredients except marshmallows in a slow cooker and stir to combine.
  • Cook, covered, until everything is melted, stirring occasionally, 2 hours on LOW.
  • Alternatively you could do this on the stovetop, stirring often till completely heated through.
  • Ten minutes before serving, add marshmallows and let them get melty, or add to each mug.
  • Garnish with more marshmallows, if desired.

My Thanksgiving Picks

Super-food Spotlight ~ The Incredible Oolong Tea

I am not a huge hot tea drinker, though I will have it on occasion, but… I love iced tea. I love sweet iced tea. I was raised on it. There is not much better on a hot summer day than a tall glass of sweet iced tea! However, a glass full of tea flavored sugar water is not so good for the waistline.

To fill my desire for sweet tea I have lots of options. I can take my regular iced tea and sweeten it with straight stevia. This is my favorite and the most economical because it only takes about a half a teaspoon for me to sweeten a whole gallon of tea. However, you MUST have a good stevia! I really highly recomment the stevia linked above. If you have been burned by the bitter taste of a low quality stevia, don’t count it out till you’ve tried this one!

A couple other sweetening options are Super Sweet Blend (similar to truvia but sweeter) or Gentle Sweet. Gentle Sweet is the least economical option because it is not as sweet per ounce as the others, but some people just really like the taste.

So, iced sweet tea is a delicious refreshing drink, but how can we take it up a notch? Well, enter Oolong Tea!

This delicious tea makes a wonderful sweet iced tea, but with metabolism boosting benefits to boost. You can brew it just like regular tea and enjoy it hot or iced. Or if you really want to up the benefits you can turn this tea into a drink called The Shrinker. The link will take you to a recipe for this refreshing, weight loss promoting drink.

Pro-Tip – GGMS Concentrate

If you have a serious diet soda addiction (like me) you probably know that it isn’t doing your health any favors. But it tastes so good! I mean, I can avoid a lot of things if I can just have a great big diet Dr. Pepper or diet Mountain Dew…I digress. I’m trying, really I am. and I’ve told you before that THM has a drink that helps with soda addiction – Good Girl Moonshine. I’ve shared with you my favorite recipe, but what I want to share with you today is how I make it easier for me to drink this each day.

Here’s the deal. I don’t like to have to put a lot of work into a drink. I just like to grab and go (thus why diet soda is so appealing to me). So I am always looking for a quicker way to do things. Enter GGMS Concentrate!

There it is! So simple! I don’t even have to dirty a new container to keep it in!

A couple notes about this…I like my GGMS with 2 TBS of ACV per quart. If you are new to GGMS you might want to start with 1 TBS at a time. I am not a huge ginger fan so I use 1/4 tsp per serving. And to give things an even bigger super food boost I add baobab!

GGMS Concentrate (This makes 8 servings)

16 TBS Apple Cider Vinegar*
2 tsp ginger powder
4 TBS Baobab Boost Powder (this is not part of the original recipe, but I like getting it in!)
3/4 tsp stevia
4 tsp pure cherry extract
4 tsp pure lime extract

Put all ingredients in a jar (I use an old ACV jar) and shake till mixed. Store in the fridge. Use 2 1/2 TBS of concentrate per quart of water. I like to use my soda stream to make sparkling water, then I don’t feel like I’m missing my soda! 🙂

*If you want your GGMS with less ACV use 8 TBS instead of 16 and use 1 1/2 TBS of the concentrate when making your quart of GGMS.
